An easy way to deal with removing the middle (signal) wire is to get a short servo extension, cut that wire, then plug it into the circuit. That way you don't have to mess with the ESC wire and it's still good later if you want it intact.
For soldering I'd get a pack of the cheaper imitation Deans and set out to ruin them first. Some of those are harder to solder than the real thing since the nylon is softer.

My .02 about 2.4
I have had my DX6i since May and have had no problems whatsoever. I have converted all my planes to it.(5 total all parkflyers) As far as ESC overheat I actually had a cheap no name ESC catch fire. Upgraded to castle creations and havent had any problems. For the safest performance I believe a switchmode ESC is the way to go. As far as 3s: as long as you have a quality ESC with the right amount of cooling, 4-5 micro servos such as S-75 or HS-55 should be no problem. This is based on my own experience mixed with a little knowledge. Others experience may vary. A BEC does come in handy if you are running standard size servos such as a gas->electric conversion. To each there own.
