I would like to know if a plane calls for a 30 amp ESC and I have a 40 amp sitting here on the bench and it will fit can I use it or do I need to go get a 30?
I understand I can't go the other way around use a 20 if it calls for a 30 but is it okay to upsize if you have the room and the weight is not an issue.

Yes you can use a 40amp, I always like to go a little bigger, allows for more motor options, and prop options. This is where a watt meter would come in handy, a very god tool when flying electrics.
Most esc's have a little more "give" 30A ESC can usually handle more amperage for a number of seconds. depending on prop etc.. like may be able to handle 35 amps for 30 seconds or something like that for example.
