I have been flying my stock Super Cub LP for over a year now. Its crashed quite a few times, but it still flies even when its ~25% epoxy. (The only times its crashed have been when I let other people fly it; I should probably catch on to that...) Anyways, I just added new 2.5" Dubro wheels, the grey foam kind, and a Parkzone P51 propeller. It ran fine when I tested it in the garage, but when I fly it, the motor seemed to slow down at a fast rate, much like it does when the battery gets low. I kept it in the air for about 5-10 minutes, thinking the propeller just shortened the battery life. When it finally came down the motor was smoking with a burning plastic smell. I've never seen it look or smell this way before. I let it sit for a while then popped in a fresh battery. The motor was spinning so slowly that the airplane couldn't get airborne, even on full throttle. I'm assuming I burnt out the motor? Or could it be the ESC or both? Thanks, I'm not too experienced with electronics.

The Stock SC prop is a 9x6. The prop on the Parkzone P51D is also a 9x6. I may be missing something here, and I stand to be corrected , but the props that you mentioned are the same and should produce the same amount of thrust. There should have been no difference in amperage draw by changing the props. I went to the Parkzone website and looked up the parts for the P51D, it shows a 9x6.
What size prop did you put on???
Even if you went up to a 10x8 prop(that is the size that comes with the float kit) you should not be experiencing the problems you've described.

I put on a parkzone 10x8 P51 prop. It's very odd. I'm slowly taking apart the motor now to see if there's any parts out of alignment.

Don't bother unless you want to satisfy your curiosity. You burned it out. In this sport it's called "letting out the magic smoke that makes it run". They are about impossible to put back together right after you open them up anyway. That is a massive jump in power draw on an old motor with the prop size increase.
It is possible you also fried the ESC. Only sure way to know is start replacing parts.
