Well it's taken awhile but I finally have all the parts for a full upgrade:
eMax BL2215/20 engine + mount Hobbyking SS Series 25-30A ESC HXT900 9g / 1.6kg / .12sec Micro Servos
Hobby King 2.4Ghz 6Ch Tx & Rx V2 (Mode 2) ZIPPY Flightmax 1600mAh 3S1P 20C lipo battery GWS-DD-1060 GWS EP Propeller (DD-1060 254x152mm)
So.... Where do I start? I've looked around for a how-to guide but haven't found anything yet.
Does anyone know of a good link to help me walk through this?
Thanks!

What seems to be missing is the engine mount that will provide the thrust angle, which is the most challenging part of the upgrade. This is my upgrade to brushless. supercubclub.proboards.com/index.cgi?board=motors&action=display&thread=3161Before you go brushless I would like to suggest that you upgrade everything except the stock motor. However, you may need a brushed esc (20amp). It is worth trying this option and see how it goes. I have done this with one of my super cub but have not had the chance to fly it yet. Happy to share the experience. Here is an example of a similar upgrade. thesmithfam.org/blog/2007/02/

Having spent about the cost of the original plane, I'm committed to the brushless upgrade. I suppose I have to find the right mount for the engine.
How do you test the thrust angle?

Angle needs to be down and to the right. Measured from the screws that hold the gearbox to the firewall, bottom left and top right need to be even, top left screw needs to be 2mm further forwards, and bottom right needs to be 2mm further back. I would recommend just getting something off ebay that's already made up for you. I used this one: cgi.ebay.com.au/ws/eBayISAPI.dll?ViewItem&item=250591252393&ssPageName=STRK:MEWNX:IT
